Mr. Ogose Haruo, the owner of the tea plantation, told me about the work he does at the Tea garden throughout the year.
October, November
From mid-October to early November, we start harvesting the tea leaves for hojicha ( roasted green tea ) .
We call the harvest in October “Yonbancha” ( the fourth tea).
The reason for harvesting at this time of the year is partly because there is less tea harvesting in other fields and tea processing plants are more readily available.
After harvesting the hojicha, we do the “Narashi sagyo (shaping the entire surface of the tree)” again.
December
December is the beginning of the winter maintenance work and weeding. On rainy days, we pack and ship tea in the workshop.
